Colorful coleslaw with red and green cabbage, orange carrots in a sweet & tangy dressing, mayo-free delight.
Ingredients:
  • 6 cups shredded green cabbage
  • 1.5 cups shredded carrot
  • 1 cup shredded red cabbage
  • 0.5 cup shredded onion
  • 0.25 cup kosher salt
  • 1 cup cider vinegar
  • 1 cup white sugar
  • 1 tablespoon celery seed
  • 1 tablespoon dry mustard
  • 0.25 cup vegetable oil
  • ground black pepper to taste
Instructions:
  • Combine green cabbage, carrot, red cabbage, and onion in a colander. Season with kosher salt and let sit for 30 minutes to drain.
  • Combine cider vinegar, sugar, celery seed, and dry mustard in a small saucepan over medium-low heat. Stir until sugar dissolves, then remove from heat and allow to cool.
  • Extract all juice from cabbage mixture and transfer vegetables to a serving bowl. Generously pour desired amount of vinegar mixture over vegetables, drizzle with vegetable oil, sprinkle with black pepper, and toss coleslaw to evenly coat. Chill in the refrigerator for 2 hours to meld flavors.
