Savory Texas cowboy beans with pork sausage, sweet apples, and a touch of rum.
Ingredients:
6cups cold water
2.25 cups dried pinto beans
2tablespoons butter
0.5 poundbulk pork sausage
2cups peeledtart apple slices
1.5 cups tomato juice
1cupchoppedonion
0.25 cupbrown sugar
2clovesgarlic, mashed
2teaspoons salt
1teaspoonchili powder
1teaspoondry mustard
0.25 teaspooncoarse black pepper
0.25 cupJamaican rum
0.25 cupsour cream, for topping
Instructions:
Place the beans in a pot with cold water and let soak for 8 hours to overnight.
Combine butter with the beans and water in a pot; bring to a boil, then lower heat, cover, and simmer for 2 hours until beans are tender.
Heat a large skillet over medium-high heat. Cook pork sausage until browned and crumbly, about 5 to 7 minutes. Drain and set aside 2 tablespoons of sausage drippings.
Combine sausage and reserved drippings with apple slices, tomato juice, onion, brown sugar, garlic, salt, chili powder, mustard, and black pepper in with the beans. Bring mixture to a boil, then simmer covered on low heat for about 2 hours to allow flavors to meld.
Gently fold in rum with the beans, spoon into bowls, and garnish with sour cream.
