Spiced cauliflower and potato dish - easy Indian-inspired dinner in less than an hour.
Ingredients:
  • 3 tablespoons canola oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon caraway seeds
  • 0.5 red onion, chopped
  • 4 cloves garlic, minced
  • 1 head cauliflower, cut into florets with 1-inch stalks
  • 1 large potato, diced
  • 1 teaspoon red chili powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 0.25 cup chopped fresh cilantro, or to taste
Instructions:
  • In a skillet over medium heat, sizzle cumin and caraway seeds in oil until they start to pop and the oil bubbles, about 1 to 2 minutes. Sauté onion and garlic in the fragrant oil until the onion turns soft and translucent, about 5 to 10 minutes.
  • Toss cauliflower and potato in the onion mixture until well coated with oil. Sprinkle in chili powder, turmeric, and salt, and stir to coat all the vegetables evenly.
  • Cook the vegetables in a covered skillet over medium-low heat, stirring occasionally, until the cauliflower and potatoes are softened, about 20 minutes. Finish by sprinkling with fresh cilantro.
