Roasted cauliflower and eggplant seasoned with curry, cumin, and garlic salt create a flavorful side dish.
Ingredients:
  • 1 eggplant, peeled and sliced
  • 1 small head cauliflower, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic salt
  • 6 fresh basil leaves, sliced
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C and line a baking sheet with parchment paper.
  • Combine the eggplant and cauliflower in a spacious bowl with a secure lid.
  • Combine olive oil, curry powder, ground cumin, garlic salt, and basil in a bowl. Coat eggplant and cauliflower with the mixture by shaking in a lidded bowl. Then, spread them out on a baking sheet to prepare for baking.
  • Bake until golden brown and caramelized, approximately 30 minutes in a preheated oven.
