Quick and easy mac and cheese with cauliflower - a family favorite weeknight dinner.
Ingredients:
  • 1.5 cups elbow macaroni
  • 0.5 cup cauliflower florets
  • cooking spray
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 0.5 cup milk
  • 1.5 cups shredded Cheddar cheese
  • 0.5 (8 ounce) package cream cheese
  • 0.5 teaspoon salt
  • 0.125 teaspoon ground black pepper
Instructions:
  • In a large pot, bring lightly salted water to a boil. Add elbow macaroni and cook until al dente, about 8 minutes. Drain the pasta.
  • Prepare a steamer by filling a saucepan with water, ensuring it's just below the bottom of the steamer insert. Bring the water to a boil, then steam the cauliflower with the lid on until tender, about 5 to 6 minutes. Transfer the steamed cauliflower to a blender or food processor and blend until smooth.
  • Spray a large saucepan with non-stick cooking spray and heat over medium. Stir in oil and flour until a thick paste forms, for about 1 to 2 minutes. Pour in milk and continue stirring until the mixture thickens, in about 3 to 4 minutes.
  • Combine cauliflower, Cheddar cheese, cream cheese, salt, and pepper with milk mixture until sauce is creamy. Gently mix in macaroni until well coated.
