"Upgrade your potato salad with a refreshing twist! This make-ahead cauliflower, pea, and egg salad is perfect for picnics and BBQs."
Ingredients:
  • 1 head cauliflower, trimmed and cut into bite-size florets
  • 0.75 cup mayonnaise
  • 1 tablespoon mustard
  • ground black pepper to taste
  • 3 hard boiled eggs, chopped
  • 0.75 cup frozen green peas, thawed
  • 0.25 cup dill pickles, chopped
  • 3 slices crisply cooked bacon, crumbled
Instructions:
  • In a large saucepan, simmer cauliflower in water until tender when pierced with a fork, around 10 minutes. Drain and allow to cool briefly.
  • In a large bowl, combine mayonnaise, mustard, salt, and pepper. Mix in cauliflower, eggs, onion, peas, dill pickles, and bacon until everything is coated evenly. Chill in the refrigerator for 2 to 24 hours for enhanced flavor.
