Creamy bacon and cheese veggies for a deliciously satisfying protein-packed side.
Ingredients:
  • 10 slices bacon, cut into 1/2 inch slices
  • 1 cup mayonnaise or salad dressing
  • 1/4 cup sugar
  • 1 medium head cauliflower (about 2 lb), separated into florets
  • 1 small onion, finely chopped
  • 1 small green bell pepper, finely chopped
  • 8 oz Colby Monterey jack cheese, cut into 1/2 inch cubes
Instructions:
  • Cook bacon pieces in a 12-inch nonstick skillet over medium heat until crisp, about 5 to 7 minutes. Drain on paper towels and set aside.
  • Combine mayonnaise and sugar in a large bowl. Toss in cauliflower, onion, and bell pepper until evenly coated with the mixture.
  • Before serving, gently fold in the cheese until it melts into the dish. Top with a generous sprinkle of crispy bacon for added flavor and texture.
