Cheesy three pasta dish with peppers and mushrooms.
Ingredients:
  • 1 green bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 cups sliced and quartered pepperoni
  • 16 ounces fresh mushrooms, sliced
  • 1 (32 ounce) jar spaghetti sauce
  • 1 clove garlic, peeled and minced
  • 1 cup rigatoni pasta
  • 1 cup rotini pasta
  • 1 cup macaroni
  • 1 pound ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Place green pepper, onion, pepperoni, mushrooms, tomato paste, spaghetti sauce, and garlic in a large saucepan. Cover and let simmer for one hour.
  • First, bring a generously salted large pot of water to a vigorous boil. Next, cook the pasta in the boiling water for 8 to 10 minutes until it is perfectly al dente; then, drain it.
  • Preheat the oven to 350°F (175°C).
  • Combine pasta, ricotta, 1 1/2 cups of mozzarella, and Parmesan cheese. Layer the pasta and cheese mixture with the sauce in a 9x13 inch baking dish, finishing with the sauce on top. Sprinkle the remaining mozzarella over the top before baking.
  • After 30 minutes in the preheated oven, allow the dish to rest for 5 to 10 minutes before serving.
