Cheesy three pasta dish with peppers and mushrooms.
Ingredients:
1green bell pepper, chopped
1yellow onion, chopped
2cups sliced and quarteredpepperoni
16ounces fresh mushrooms, sliced
1 (32 ounce) jarspaghetti sauce
1clovegarlic, peeled and minced
1cuprigatoni pasta
1cuprotini pasta
1cupmacaroni
1poundricotta cheese
2cups shredded mozzarella cheese, divided
0.25 cupgratedParmesan cheese
Instructions:
Place green pepper, onion, pepperoni, mushrooms, tomato paste, spaghetti sauce, and garlic in a large saucepan. Cover and let simmer for one hour.
First, bring a generously salted large pot of water to a vigorous boil. Next, cook the pasta in the boiling water for 8 to 10 minutes until it is perfectly al dente; then, drain it.
Preheat the oven to 350°F (175°C).
Combine pasta, ricotta, 1 1/2 cups of mozzarella, and Parmesan cheese. Layer the pasta and cheese mixture with the sauce in a 9x13 inch baking dish, finishing with the sauce on top. Sprinkle the remaining mozzarella over the top before baking.
After 30 minutes in the preheated oven, allow the dish to rest for 5 to 10 minutes before serving.
