Overnight marinated baby back ribs smoked over apple cider with a saucy, spicy BBQ twist.
Ingredients:
  • 3 tablespoons white sugar
  • 3 tablespoons packed brown sugar
  • 2 tablespoons sea salt
  • 1.5 tablespoons ground New Mexico chile powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Hungarian paprika
  • 1 tablespoon ground ancho chile powder
  • 1 tablespoon ground black pepper
  • 1.5 teaspoons dried rosemary
  • 1.5 teaspoons dried thyme, or more to taste
  • 1.5 teaspoons ground cumin, or more to taste
  • 1.5 teaspoons ground nutmeg, or more to taste
  • 1.5 teaspoons ground allspice
  • 0.5 teaspoon cayenne pepper, or more to taste
  • 3 slabs baby back pork ribs
  • 4 cups apple cider, or as needed
  • 2 cups barbeque sauce
Instructions:
  • Combine a medley of white sugar, brown sugar, sea salt, chile powder, garlic powder, onion powder, paprika, ancho chile powder, black pepper, rosemary, thyme, cumin, nutmeg, allspice, and cayenne pepper in a bowl to create the flavorful rib rub.
  • Ensure every inch of the ribs is generously coated with the flavorful rub. Wrap them snugly with plastic and let them marinate in the fridge for 8 hours up to overnight.
  • Preheat your smoker as per manufacturer's instructions to 300 degrees F (150 degrees C). Arrange ribs meat-side up in the smoker and smoke until beautifully browned, approximately 1 1/2 hours. Remove the ribs from the smoker.
  • Place a generous amount of apple cider into an aluminum roasting pan. Stand the ribs in the pan, arranging them upright if necessary. Cover with aluminum foil and return to the smoker. Smoke the ribs until they are tender, which should take approximately 2 more hours.
  • Place the ribs on the grill and generously brush with barbecue sauce. Grill each side for about 10 minutes until they develop a rich, dark brown color.
