Ingredients:
  • 2 tea bags flavored with orange rind and sweet spices
  • 2/3 cup boiling water
  • 1 cup Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 3/4 cup granulated sugar
  • 1/2 cup butter or margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • Additional ground cinnamon, if desired
  • 2 tablespoons butter or margarine
  • 1 1/2 cups powdered sugar
  • Reserved 2 tablespoons prepared tea
  • 1/4 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F. Line the bottom and side of an 8x1 1/2-inch round pan with parchment paper, then grease the paper with shortening and lightly flour it. Steep tea bags in boiling water in a measuring cup for 5 minutes. Squeeze out the tea bags into the cup and add enough water to measure 2/3 cup of tea. Set aside 1/2 cup of tea for the cake and reserve 2 tablespoons for the glaze.
  • In a medium bowl, whisk together flour, baking powder, 1 teaspoon cinnamon, salt, ginger, cardamom, and cloves; set aside. In a large bowl, cream granulated sugar and 1/2 cup butter with an electric mixer until fluffy, then mix in eggs and 1 teaspoon vanilla until smooth. Gradually mix in flour mixture and tea alternately until batter is smooth. Pour the batter into the pan.
  • Bake the cake for 28 to 33 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes in the pan, then transfer to a wire rack. Allow it to cool completely for about 1 hour.
  • In a 1-quart saucepan, melt 2 tablespoons of butter over medium heat. Stir in all the remaining ingredients until you achieve a smooth mixture. Pour the Chai Glaze over the cooled cake, letting it drip down the sides. Lastly, sprinkle with a little extra cinnamon for a finishing touch.
