Delicious kale soup paired perfectly with warm cornbread for a cozy evening.
Ingredients:
  • 3.5 cups chicken broth
  • 0.5 cup vegetable broth
  • 0.75 cup water
  • 1.5 cups shredded cooked chicken
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 5 small red potatoes, cubed
  • 2 tablespoons ground black pepper
  • salt to taste
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 2 cups shredded kale
Instructions:
  • In a large pot, simmer chicken broth, vegetable broth, water, chicken, cannellini beans, potatoes, pepper, salt, oregano, and garlic powder until potatoes are tender, around 15 minutes. Stir in kale and simmer for another 5 minutes. Serve hot.
