Vibrant lamb and corn salad bursting with flavors!
Ingredients:
  • 18.20 gm olive oil
  • 2 garlic cloves, crushed
  • 2.50 gm ground cumin
  • Sea salt & freshly ground pepper
  • 2 (about 500g) lamb eye of loin fillets
  • 200g green beans, halved
  • Olive oil spray
  • 2 super sweet corn cobs, husks removed
  • 250g cherry tomatoes
  • 70g rocket
  • Lemon wedges, to serve
Instructions:
  • Combine oil, garlic, cumin, salt, and pepper in a small bowl. Rub lamb with the spice mix. Heat a chargrill pan over medium-high heat. Cook lamb for 2-3 minutes per side for medium rare or to desired doneness. Rest for 5 minutes, then slice.
  • Boil beans in a saucepan for 2-3 minutes until tender. Drain and cool in cold water.
  • Spray the corn and cherry tomatoes with oil and season with salt and pepper. Grill the corn for 7-10 minutes until slightly charred. Slice off the kernels from either side of the core.
  • Grill the tomatoes for 5 minutes until slightly softened. In a large bowl, mix together the lamb, corn, beans, grilled tomatoes, and rocket. Serve with lemon wedges.
