"Savor a quick and wholesome char-grilled lamb dish ready in under 20 minutes."
Ingredients:
  • 2 (about 200g each) lamb eye of loin (backstraps)
  • Olive oil spray
  • 1 x 350g pkt Turkish Bread
  • 2 x 150g ctns bought tabouli
  • 130g (1/2 cup) Greek-style natural yoghurt
Instructions:
  • Heat up a barbecue grill or large chargrill on medium-high.
  • Coat the lamb with a mist of olive oil and generously season with salt and pepper. Grill the lamb for 3-4 minutes on each side for a perfect medium doneness, or adjust cooking time to your preferred level of doneness. Place the lamb on a plate, lightly cover with foil, and let it rest for 5 minutes before serving.
  • Lower the heat to medium. Slice the bread crosswise into 4 pieces and then cut each piece in half horizontally. Lightly coat both sides of the bread with olive oil spray. Grill the bread for 2 minutes on each side or until lightly toasted.
  • Slice the lamb into 1cm-thick pieces. Portion out the tabouli and lamb onto plates. Enjoy with a side of yogurt and bread.
