Elevate your steak with a decadent blue cheese sauce and crisp green beans.
Ingredients:
  • 4 (200g each) beef rump centre steaks
  • Salt & freshly ground pepper
  • 600g green beans, trimmed
  • 125g sour cream
  • 65g mayonnaise
  • 20.00 ml white wine vinegar
  • 60g blue cheese
Instructions:
  • Brush each steak with a touch of olive oil and generously season with salt and pepper. Preheat a chargrill pan over medium-high heat. Grill the steaks for 2 minutes on each side for a medium doneness. Rest the steaks on a plate covered with foil.
  • Next, coat the beans in the remaining olive oil and generously season with salt and pepper. Cook the beans in batches on a medium-high heat for about 5 minutes, until they develop a nice char and reach a tender consistency.
  • Combine sour cream, mayonnaise, and white wine vinegar with a whisk. Add 40g of crumbled blue cheese and mix well. Serve the sliced steaks with chargrilled beans and a dollop of blue cheese sauce. Garnish with small wedges of the remaining blue cheese and a sprinkle of ground pepper.
