Boost your omega-3 intake with delicious homemade tuna pizza.
Ingredients:
  • 125.00 ml tomato tapenade (see note)
  • 2 x 335g pizza bases
  • 425g can tuna in brine, drained, broken into large chunks
  • 250g chargrilled capsicum, cut into thin strips
  • 150g chargrilled eggplant, cut into thin strips
  • 150g feta, crumbled
  • 80g baby rocket leaves
  • extra virgin olive oil
Instructions:
  • Preheat the oven along with two baking trays to 230°C.
  • Evenly spread the flavorful tapenade on the pizza bases. Add the tuna, capsicum, and eggplant on top. Sprinkle with the savory feta and season with pepper.
  • Bake pizzas for 15 minutes, switching trays after 10 minutes, until bases are crisp and golden. Top with rocket, drizzle with oil, and serve.
