Perfect Passover charoset combining Sephardic and Ashkenazi styles for a chunky, sweet spread. Great for matzo!
Ingredients:
  • 1 cup walnut halves and pieces
  • 1/2 pound (about 13 large) medjool dates, pitted
  • 1/4 cup orange juice or Manischewitz wine
  • 1 Granny Smith or Fuji apple, peeled, cored, and chopped
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
Instructions:
  • Prepare the nuts: Place the walnuts in a food processor and pulse for 1 second intervals until finely chopped. Set aside, reserving 1 tablespoon for garnishing.
  • Make a thick paste: Combine the pitted dates and orange juice in the empty food processor. Process until a thick paste forms, scraping down the sides as needed.
  • Mix the paste with the chopped nuts in a bowl. Stir in the apple, cinnamon, and ginger until well combined.
  • Enhance and present: Sample the charoset and customize with extra juice or wine, cinnamon, or ginger to your liking. Enjoy immediately or up to 48 hours later. Store in the fridge. For an elegant touch, top with the set-aside tablespoon of walnuts.
