Create a quick and easy dinner winner with just 5 ingredients in 10 minutes.
Ingredients:
  • 400g jar Olive pasta sauce
  • 200g piece Devondale Mozzarella Cheese Block (500g)
  • 125.00 ml fresh basil leaves, plus extra leaves, to serve
  • 16 slices (about 500g) chargrilled eggplant
  • 30g (1/4 cup) Garlic & Herb Schnitzel Mix
  • 20g (1/4 cup) pre-shredded parmesan
Instructions:
  • Preheat grill on high. Lightly grease a small baking tray or ovenproof frying pan, then place it under the grill to warm up.
  • Transfer the pasta sauce into a microwave-safe bowl, cover it, and heat on high for 1 minute or until warmed through.
  • Slice the mozzarella thinly and shred the basil while the pasta sauce heats up.
  • 1. Preheat the oven and warm the tray or pan. 2. Layer 4 eggplant slices on the base. 3. Add one-quarter of the pasta sauce, mozzarella, and one-third of the basil on each slice. 4. Repeat layering 3 more times, finishing with mozzarella. 5. Sprinkle with schnitzel mix and parmesan. 6. Season to taste.
  • Grill until golden and heated through, then serve with a sprinkle of extra basil.
