Cheat’s homemade pappardelle with quick tomato sauce

Savor the bold simplicity of this zesty tomato sauce with a hint of spicy freshness.
Ingredients:
  • 2 cloves garlic peeled and finely sliced
  • ½-1 fresh red chilli halved, deseeded and finely sliced
  • 1 small bunch of fresh basil leaves picked
  • 400 g good-quality tinned chopped tomatoes
  • sea salt
  • freshly ground black pepper
  • 250 g fresh lasagne sheets
  • Parmesan cheese freshly grated, to serve
Instructions:
  • - Heat a large frying pan over medium heat and add a generous amount of olive oil. Once the oil is hot, sauté the garlic and chili until lightly browned. Add most of the basil, watching out for splattering, then quickly stir in the tomatoes. Bring to a boil and simmer for 5 minutes to create a chunky sauce. For a smoother consistency, strain through a coarse sieve if desired. Season with salt and pepper, keep warm. - Boil salted water in a large pot. Cut the lasagne sheets into strips on a floured surface. Cook the pasta in boiling water until al dente, then drain, reserving some cooking water. Mix the pasta into the sauce. Add reserved water if needed to thin out. Serve with Parmesan and remaining basil leaves. Enjoy hot.
