Cheat’s jam and custard doughnuts recipe

Elevate store-bought doughnuts with decadent custard filling for a messy and satisfying treat.
Ingredients:
  • 500ml (2 cups) milk
  • 2 tsp vanilla bean paste
  • 2 egg yolks
  • 215g (1 cup) caster sugar
  • 60g cornflour
  • 3 x 290g packets jam-filled doughnuts
  • 30g butter, melted
  • 150ml double cream, whipped
Instructions:
  • In a saucepan over medium heat, bring 375ml (1 1/2 cups) of milk and vanilla to a gentle boil. Remove from heat once boiled.
  • In a heatproof bowl, use electric beaters to whisk yolks and 80g sugar until pale and creamy. Add cornflour and remaining milk, whisk until combined. Slowly pour hot milk mixture into yolks, whisking continuously until smooth. Return mixture to saucepan and whisk over medium heat until boiling and thickened, about 3-5 minutes. Transfer to a bowl, cover with plastic wrap, refrigerate for 3 hours or overnight to chill.
  • Prepare a baking tray with a layer of baking paper. In a bowl, put the rest of the sugar. Brush each doughnut with melted butter, then coat in the sugar. Arrange the coated doughnuts on the baking tray.
  • Beat chilled custard with electric beaters until velvety smooth. Gently fold cream into the custard until fully combined. Slice doughnuts in half horizontally. Spoon the heavenly custard mixture over the bottom halves. Finally, delicately place the tops back on to serve.
