Mini Italian dessert perfection.
Ingredients:
  • 250g tub mascarpone
  • 300ml pouring cream
  • 80g (1/2 cup) icing sugar
  • 1 tsp vanilla bean paste
  • 20.00 ml brewed espresso coffee, cooled (see note)
  • 80ml (1/3 cup) Marsala
  • 300g (18) McVitie’s Dark Chocolate Digestive biscuits
  • Dark cocoa powder, to dust
Instructions:
  • In a large mixing bowl, mix mascarpone, cream, icing sugar, and vanilla bean paste. Use electric beaters until soft peaks form. Transfer half of the mixture to another bowl, add cooled coffee, and gently fold through without fully combining.
  • Spoon coffee mixture into six 1-cup glasses. Add crumbled digestive biscuit, drizzle with 1 teaspoon Marsala. Top with cream mixture, another crumbled biscuit, and 1 tsp Marsala.
  • Layer the remaining coffee cream, biscuits, Marsala, and plain cream mixture. Chill in the fridge for at least 4 hours or overnight to enhance flavors. Sprinkle generously with cocoa powder just before serving.
  • Substitute 1 tablespoon instant coffee granules mixed with 1 tablespoon boiling water for the espresso. Feel free to swap the Marsala for your favorite liqueur.
