Cheat's apple pie with golden syrup

Irresistible apple pie with a cakey top and golden syrup sauce.
Ingredients:
  • White sugar, to decorate
  • Double cream, to serve
  • 500g apple
  • 32.00 gm brown sugar
  • 53.60 gm golden syrup
  • 0.63 gm ground ginger
  • 1 egg white, lightly beaten
  • 125g butter, chilled, chopped
  • 225.00 gm self-raising flour
  • 33.00 gm almond meal
  • 53.75 gm caster sugar
  • 1 egg yolk
  • 20.00 gm iced water
Instructions:
  • For the shortcake pastry, pulse butter, flour, almond meal, and sugar in a food processor until it resembles fine breadcrumbs. Add egg yolk and iced water, then pulse until the dough just comes together. Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for 30 minutes until firm.
  • Preheat your oven to 200C (180C fan-forced).
  • Cut each apple into 12 wedges. In a flameproof, ovenproof frying pan, combine brown sugar, golden syrup, butter, and ground ginger. Stir and cook for 4 to 5 minutes until sugar is dissolved. Add apple and cook for an additional minute, making sure to coat the apples with the mixture. Remove from heat.
  • Roll 2/3 of the dough between 2 sheets of baking paper to a thickness of 3mm, making sure it's large enough to cover the top of the pan. Place the pastry over the apples in the pan, trim the edges, and tuck the cut edge around the apples. Brush the top with a little egg white. Roll the remaining dough between 2 sheets of baking paper to 3mm thickness. Use a 5cm leaf-shaped cutter to cut shapes from the dough. Place the leaf shapes around the edge of the pie and decorate the top with more shapes. Brush the entire pie with egg white and sprinkle with white sugar.
  • Bake until golden brown and apples are tender, about 40-45 minutes (refer to notes). Serve with cream.
