Irresistible no-bake cheesecake bars for a hassle-free and decadent dessert experience.
Ingredients:
  • 12 gingernut biscuits
  • 250g cream cheese, softened
  • 24.00 gm icing sugar mixture
  • 80g lemon curd
  • Strawberries, halved, to serve
  • 1 gingernut biscuit, extra, crushed
Instructions:
  • Preheat oven to 180°C. Arrange one biscuit over each cavity of a 12-hole round-bottomed patty pan or a 12-hole, 1/3-cup/80ml muffin pan. Bake for 4 mins until biscuits soften. Gently press the center of each biscuit into the hole using a clean tea towel to create tart cases. Let them cool slightly in the pan, then transfer to a wire rack to cool completely.
  • In a medium bowl, place the cream cheese and sift icing sugar over it. Stir until well combined.
  • Distribute the cream cheese mixture evenly into the tart cases, creating a slight indentation in the center. Add a dollop of lemon curd and a fresh strawberry on top. Finish by sprinkling crushed biscuits before serving.
