Whip up a quick and delicious chickpea korma curry with lots of vegetables for a hearty vegetarian dinner.
Ingredients:
  • 500g pkt Roasting Vegetables with Garlic & Rosemary
  • 400g can Chickpeas, rinsed, drained
  • 375g pkt creamy korma simmer sauce
  • 2 x 250g Microwave Basmati Rice Pouches
  • 82.50 ml coriander sprigs
Instructions:
  • Cut the vegetables and garlic from the roasting kit into 2cm pieces, setting aside the rosemary for later use. Heat a large non-stick frying pan over medium heat, then add the vegetable mixture and chickpeas. Cook and stir for 5 minutes until the onion softens.
  • Stir in the korma sauce and 1/2 cup (125ml) water with the vegetables in the pan. Bring to a boil, then lower the heat, cover, and simmer while stirring for 5 minutes. Uncover and continue cooking while stirring for an additional 5 minutes until the vegetables are tender and the sauce thickens slightly.
  • Prepare the rice as instructed on the package.
  • Serve the rice and vegetable mixture in individual bowls, garnish with fresh coriander.
