Cheat's eggnog and berry trifle recipe

Impressive eggnog and berry trifle, easy for all to make.
Ingredients:
  • 500g frozen mixed berries
  • 80g icing sugar
  • 250g strawberries, quartered
  • 125g blueberries
  • 375ml thickened cream
  • 1L vanilla custard
  • 40.00 ml brandy or orange juice
  • 1.25 gm ground nutmeg
  • 400g pkt Jam Sponge Roll, cut into 1.5cm-thick slices
Instructions:
  • In a medium saucepan, mix together mixed berries and half of the icing sugar. Cook over medium heat, stirring occasionally, for 8 minutes until the berries soften. Let it cool down, then gently stir in the strawberry and blueberries until well combined. Enjoy!
  • Whip the cream, vanilla, and remaining icing sugar with an electric mixer until stiff peaks form in a bowl. Gently swirl in 1 tablespoon of the berry juices from the pan to create a beautiful marble effect.
  • Combine the custard, brandy or orange juice, and nutmeg in a bowl. Stir well.
  • Set aside 1 tablespoon of the leftover berry juices. Layer the sponge roll slices on the base and side of a 12-cup (3L) glass serving dish. Pour in the custard mixture, then add the berry mixture and cream mixture on top. Chill in the fridge for 2 hours or overnight until it sets.
  • Serve by drizzling with the flavorful reserved berry juices.
