Cheat's ice-cream cake

Create professional-looking dessert effortlessly. Keep the secret!
Ingredients:
  • 300g dark chocolate melts
  • 2 litre square tub Neapolitan ice-cream
  • 24 mini meringues
  • 150g fresh strawberries, hulled, halved
Instructions:
  • On a sheet of baking paper, carefully outline two 10cm x 32cm rectangles with a pencil, making sure they're 5cm apart. Flip the paper over, chocolate Melts in a microwave-safe bowl, and microwave them on MEDIUM for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until smooth. Spread the melted chocolate over the rectangles and let it set for 5 minutes. Then, use a warm knife to cut each rectangle in half to create four 10cm x 16cm pieces.
  • Let the ice cream sit at room temperature for 5 minutes to soften. Use a knife to loosen the edges, then gently flip onto a platter and remove the tub. Smooth the surface for a clean finish and return to the freezer.
  • Put the rest of the chocolate Melts in a microwave-safe bowl. Microwave on MEDIUM (50%) for 1 to 1 minute 30 seconds, stirring every 30 seconds with a metal spoon, until smooth and melted. Use the chocolate to sandwich the meringues.
  • Take the ice-cream out of the freezer and surround it with chocolate pieces, ensuring they stick out 2cm above the ice-cream. Tie a ribbon around to secure. Add strawberries and meringue kisses on top. Serve promptly (refer to Notes).
