Kids will enjoy making and baking their own fun Australian biscuits.
Ingredients:
  • 185g butter, softened
  • 161.25 gm caster sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 500.00 ml Cake, Biscuit and Pastry plain flour
  • 165.00 gm raspberry jam
  • 750.00 ml pink and white mini marshmallows
  • 42.50 gm desiccated coconut
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and line 3 baking trays with baking paper.
  • With an electric mixer, whip together butter, sugar, and vanilla until light and fluffy. Next, add the egg and beat until well mixed. Then, sift flour over the butter mixture and gently stir with a wooden spoon until fully combined.
  • Roll out the dough to a 4mm thickness between two sheets of baking paper. Cut the dough into 5cm squares and place them on trays. Re-roll the remaining dough and repeat the process.
  • Bake until lightly golden, about 8 minutes. Let cool on trays for 5 minutes. Spread each biscuit with 1/2 teaspoon jam, top with marshmallows, and return to oven for 1 to 2 minutes until marshmallows soften. Sprinkle with coconut, then transfer to a wire rack to cool completely before serving.
