Skip the Indian takeout and make this easy dinner in just 30 minutes!
Ingredients:
  • 2 lamb racks (6 cutlets on each rack), French-trimmed
  • 1/2 cauliflower
  • 450g pkt microwave basmati rice
  • 60g (1/4 cup) gluten-free tikka masala curry paste
  • 18.20 gm olive oil
  • 95g (1/2 cup) raisins
  • 40.00 ml flaked almonds
  • Natural yoghurt, to serve
  • Fresh coriander sprigs, to serve
  • Lemon wedges, to serve (optional)
Instructions:
  • Preheat your oven to 220C (200C fan forced). Divide the lamb racks in half to create 4 portions. Cut the cauliflower into florets and cook the rice according to the package instructions.
  • Place the lamb on a baking tray, followed by the cauliflower. Spoon the flavorful curry paste over them and drizzle with oil. Toss everything together until evenly coated. Roast in the oven for 25 minutes.
  • Plate the lamb, then generously top the cauliflower with the rice and raisins. Gently mix everything together before placing the lamb back on the tray. Finish by sprinkling with almonds and bake for 10 minutes until they are nicely toasted.
  • Spread the tray bake with a generous dollop of yogurt, then sprinkle with fresh coriander. Season to taste and serve with a slice of lemon, if desired.
