Celebrate Australia Day with effortless lamingtons - ideal for non-bakers!
Ingredients:
  • 340.00 gm desiccated coconut or shredded coconut
  • 1 Victoria sponge cake (in two halves)
  • 108.90 gm strawberry jam
  • 300.00 gm icing sugar
  • 32.50 gm cocoa powder
  • 4.40 gm vanilla extract
Instructions:
  • Evenly distribute the coconut on a large sheet of parchment paper.
  • Slice each sponge cake half horizontally into two layers. Spread jam on two of the layers. Place the remaining layers on top and cut each filled sponge into 8 portions.
  • Sift icing sugar and cocoa powder into a bowl. Mix in vanilla and slowly add warm water until you have a slightly runny icing. Dip each cake piece in the icing to coat it completely (note: this can be messy, consider wearing gloves). Roll each cake in coconut, then let dry on a wire rack for 15 minutes before storing in plastic containers.
