Whip up quick and delicious no-bake mango cheesecake cups for a refreshing summer treat in under 5 minutes.
Ingredients:
  • 250g cream cheese, at room temperature
  • 252.50 gm Thickened Cream
  • 125ml double cream
  • 53.75 gm caster sugar
  • 1 lemon, rind finely grated
  • 21.00 gm lemon juice
  • 1 small mango, peeled, thinly sliced
  • Passionfruit pulp, to serve
  • Mint leaves, to serve
  • Edible flowers, to serve (optional)
Instructions:
  • In a bowl, whisk cream cheese until velvety. Mix in thickened cream, double cream, sugar, and lemon zest. Whisk for 2-3 minutes until the mixture is thick and velvety. Gently fold in lemon juice until fully incorporated.
  • In each of the four 250ml glasses, spoon a generous amount of cream cheese mixture into the bottom. Add layers of sliced mango, then repeat until you reach the top, finishing with mango slices. Garnish with passionfruit pulp, mint leaves, and optional edible flowers.
