Delicious mango pancake stack with sweet ricotta and creamy gelato. Inspired by yum cha mango pancake.
Ingredients:
  • 700g fresh ricotta
  • 45g (1/4 cup) icing sugar
  • 4.40 gm vanilla extract
  • 20.00 ml finely grated lime rind
  • 8 frozen crepes (400g pkt), thawed
  • 3 large mangoes, thinly sliced
  • 500ml ctn mango toasted coconut gelato (see notes)
  • Golden Gaytime Crumbs, to serve, optional (see notes)
Instructions:
  • In a bowl, gently sprinkle icing sugar over the ricotta. Add vanilla and lime rind, then stir until well mixed.
  • Place a delicate crepe on a fancy serving plate, generously spread with a slightly rounded 1/3 cup of the rich ricotta mixture, and elegantly place an eighth of the enticing mango slices on top.
  • Layer the crepes, ricotta, and mango, then cover loosely with plastic wrap and refrigerate for at least 1 hour until firm.
  • To finish, add generous scoops of gelato and a sprinkle of Golden Gaytime crumbs, if desired. Slice into wedges and serve promptly.
