Embrace shortcuts for a scrumptious minestrone soup.
Ingredients:
  • 820g can tomato soup
  • 250.00 ml short pasta (such as macaroni or mini penne)
  • 250g frozen mixed vegetables (such as corn, peas, carrots and broccoli)
  • 400g can borlotti beans, rinsed, drained
  • Shaved parmesan, to serve (or vegetarian hard cheese)
  • 40.00 ml chopped parsley
  • Crusty bread, to serve
Instructions:
  • In a saucepan, combine soup with 1 1/2 cans of water and bring to a boil. Stir in pasta and cook for 8 minutes, stirring occasionally until pasta is almost tender and not sticking.
  • Stir in vegetables and beans, bring to a boil, and simmer for 3-4 minutes until heated through.
  • Garnish with Parmesan, sprinkle with parsley, and serve with a side of crusty bread.
