Cheat's nut-crusted chicken and rice tray bake

Try a delicious nut-crusted chicken tray bake with broccolini and radishes for a simple and wholesome dinner.
Ingredients:
  • 500.00 ml superfood nut mix
  • 8 chicken drumsticks
  • 2 eggs, lightly beaten
  • Olive oil spray
  • 450g packet microwave white long grain rice
  • 40.00 ml Moroccan seasoning
  • 42.00 gm lemon juice, plus lemon wedges to serve
  • 1 tsp chicken stock powder
  • 1 bunch broccolini, trimmed, halved
  • Tzatziki, to serve
  • Sliced radish, to garnish
  • Fresh coriander leaves, to garnish
Instructions:
  • Preheat your oven to 170C (150C fan-forced).
  • Finely chop nut mix in a food processor and transfer to a shallow bowl. In a separate shallow bowl, season eggs with salt and pepper.
  • Coat chicken in beaten egg and then cover with nut mixture. Transfer to a large roasting pan and bake for 50 minutes, or until chicken is nearly done.
  • Mix together the rice, seasoning, lemon juice, stock powder, and 1/2 cup of water in a bowl.
  • Take out the chicken from the tray. Gently spread the rice mixture in the pan. Place the chicken back in the pan along with the broccolini. Bake for 15 minutes until the broccolini is tender. Serve with tzatziki, radish, coriander, and lemon wedges.
