Easy one-pot pumpkin and pea risotto with just six ingredients.
Ingredients:
  • 400g butternut pumpkin, cut into 1cm pieces
  • 1 medium brown onion, finely chopped
  • 400.00 gm arborio rice
  • 1147.50 gm chicken style liquid stock
  • 250.00 ml frozen peas
  • 125.00 ml finely grated parmesan cheese
Instructions:
  • In a large saucepan over medium heat, simmer the pumpkin in oil, stirring occasionally, for 5 minutes until it turns golden and tender. Transfer to a plate and cover to maintain warmth.
  • Sauté the onion in a pan until softened. Stir in the rice to coat, then pour in half of the stock and bring to a boil. Simmer for 7 minutes until the stock is absorbed. Add the rest of the stock and 1 cup of cold water. Continue cooking and stirring occasionally for 8 to 10 minutes until the liquid is fully absorbed.
  • Combine the pumpkin and peas, cook for 5 minutes or until the peas are heated through. Then, fold in the cheese and serve.
