Ingredients:
  • 2L milk
  • 126.25 gm pouring cream
  • 2.40 gm salt
  • 86.63 gm fresh lemon juice
Instructions:
  • In a saucepan over high heat, bring milk, cream, and salt to a gentle simmer.
  • Incorporate fresh lemon juice with a gentle touch to keep the ricotta tender. Simmer the mixture for 2 minutes or until it forms curds. Rest for 10 minutes to let the curds settle on the surface.
  • Strain the liquid through a double layer of muslin in batches, allowing each batch to fully drain before adding the next.
  • Place the mixture in a bowl and refrigerate for up to 3 days.
