Homemade ricotta in one hour with only four ingredients - easy and delicious!
Ingredients:
  • 2 litres full-cream milk
  • 126.25 gm pure cream
  • 2.40 gm sea salt
  • 86.63 gm lemon juice
Instructions:
  • In a large heavy-based saucepan over medium heat, combine milk, cream, and salt. Heat for 10 to 15 minutes until the mixture just begins to simmer. Avoid boiling. Remove from heat and gently stir in lemon juice.
  • Let sit for 10 minutes until the creamy curds have risen to the surface and the whey has separated.
  • Place a fine sieve lined with 2 layers of muslin over a large heatproof bowl. Use a slotted spoon to gently transfer the curds in batches into the sieve. Allow it to stand for 10 minutes to drain according to Notes.
  • Enjoy immediately or transfer the mixture into an airtight container and refrigerate for up to 3 days.
