Transformed roast pork into a convenient tray bake for a simple yet satisfying meal any night.
Ingredients:
  • 57.20 gm honey
  • 46.80 gm Dijon mustard
  • 1 tsp fennel seeds
  • 4 (200g each) pork cutlets
  • 3 parsnips, peeled, quartered lengthways
  • 2 small pink lady apples, quartered, cored
  • 1 bunch broccolini, trimmed, halved lengthways
  • 1 bunch asparagus, trimmed
  • Fresh flat-leaf parsley leaves, to serve
  • Gravy, to serve
  • 500.00 ml sage and onion stuffing mix
  • 27.30 gm extra virgin olive oil
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Mix honey, mustard, fennel seeds, and half of the oil in a bowl. Put the pork in a large snap-lock bag, pour in the marinade, seal the bag, and massage it to ensure the pork is evenly coated. Ideally, refrigerate for 30 minutes.
  • Prepare Sage and Onion Stuffing Balls: In a large bowl, place the stuffing mix. In a separate jug, whisk together oil, egg, and 3/4 cup of water. Pour the mixture into the stuffing mix and combine well. Shape the mixture into 12 balls.
  • Spread the parsnip on a large baking tray and drizzle with the remaining oil. Season with salt and pepper, then mix well. Roast for 15 minutes. Add the pork, apple, and stuffing balls around the parsnip. Roast for 20 more minutes until the pork is golden. Finally, add the broccolini and asparagus and roast for another 10 minutes until the asparagus is tender. Sprinkle with parsley and serve with gravy.
