Cheat's Sicilian tuna pizza

30-minute Sicilian tuna pizza, a simple and delicious meal for any occasion.
Ingredients:
  • 450g (3 cups) self-raising flour
  • 2.40 gm sea salt
  • 185ml (3/4 cup) warm water
  • 220g Greek-style yoghurt
  • 2 x 185g cans tuna in oil, drained
  • 90g (1/2 cup) garlic and onion pizza sauce
  • 220g tub cherry bocconcini, drained, halved
  • 1/2 small red onion, thinly sliced
  • 110g (2/3 cup) pitted kalamata olives
  • 15.90 gm fresh lemon juice
  • Fresh basil leaves, to serve
Instructions:
  • Preheat your oven to 220C (200C fan forced). In a large bowl, mix the flour and salt, then create a well in the center. Add warm water, olive oil, and 130g (1⁄2 cup) yoghurt. Stir until the dough forms, then transfer it to a lightly floured surface and knead until smooth. Divide the dough into 2 portions.
  • Roll out the dough on baking paper into a 40 x 25cm rectangle. Break the tuna into chunks. Spread half of the pizza sauce, bocconcini, onion, olives, and tuna on top of the pizza base. Transfer the pizza on the paper to a baking tray. Repeat with the remaining dough and toppings on another tray. Bake for 12-15 minutes, swapping the trays halfway through cooking, until the base is golden and crisp.
  • In a small jug, combine the remaining 90g (1/3 cup) yogurt and 3 tsp lemon juice. Season with your favorite spices. Mix until fully combined.
  • Before serving, adorn the pizzas with fresh basil leaves and then generously drizzle them with lemon yogurt for a burst of flavor.
