Cheat's vegetarian paella

Flavorful vegetarian paella bursting with veggies and a touch of spice.
Ingredients:
  • 1 onion, sliced
  • 2 garlic cloves, sliced
  • 1 pinch saffron
  • 1 pinch chilli flakes
  • 1.25 gm smoked paprika
  • Zest and juice of 1 lemon
  • 220g rice
  • 125ml white wine
  • 400g can cherry tomatoes
  • 300ml vegetable liquid stock, heated
  • 4 chargrilled artichokes, quartered
  • 1 bunch asparagus, blanched, trimmed
  • 100g green beans, blanched
  • Chopped flat-leaf parsley, to serve
Instructions:
  • In a large frypan over medium heat, heat oil. Add onion, garlic, saffron, and chili flakes. Season and cook for 3-4 minutes until onion softens. Stir in paprika and lemon zest, cook for 1 minute. Add rice and cook for 1-2 minutes to coat grains. Pour in wine, cherry tomatoes, and hot stock. Stir and bring to a simmer. Cover closely with baking paper, reduce heat to medium-low, cook for 12-15 minutes until rice is cooked.
  • Combine artichoke, asparagus, and beans in the pan. Cook without covering for 2 minutes to heat through. Drizzle with fresh lemon juice, top with parsley, and enjoy.
