Quick and flavorful pasta dish ready in under 30 minutes.
Ingredients:
  • 180g tub baby bocconcini, halved
  • 1/4 tsp dried chilli flakes
  • 36.40 gm olive oil
  • 1 punnet red cherry tomatoes
  • 1 punnet yellow cherry tomatoes
  • 2 garlic cloves, crushed
  • 5.00 gm caster sugar
  • 350g rotelle (wheel-shaped) pasta, cooked, drained, tossed in a little oil
  • 250.00 ml basil leaves, torn if large
Instructions:
  • Combine bocconcini and chilli flakes in a bowl, season with sea salt and pepper to taste. Heat oil in a frypan, sauté tomatoes and garlic over medium-high heat.
  • Season the tomatoes with a touch of sugar and cook for a brief 2-3 minutes until they just begin to wilt. Mix them in with the bocconcini.
  • Rapidly reheat the cooked pasta in boiling water, drain, and combine with the bocconcini and tomato mixture. Mix in the basil leaves and serve.
