Cheese Enchiladas Verde

Tex-Mex inspired veggie enchiladas perfect any time of day.
Ingredients:
  • 1 1/2 cups shredded Mexican 4-cheese blend (6 ounces)
  • 1 small zucchini, shredded (3/4 cup)
  • 1/4 cup chopped fresh cilantro
  • 8 soft corn tortillas (5 or 6 inch)
  • 1/3 cup soft cream cheese with roasted garlic
  • 1 jar (16 ounces) green salsa (salsa verde) (2 cups)
  • 1 medium avocado, diced
  • 4 medium green onions, sliced (1/4 cup)
Instructions:
  • Preheat the oven to 350°F. Grease an 11x7x1 1/2-inch rectangular baking dish with cooking spray. Combine shredded cheese, zucchini, and cilantro.
  • Spread a generous layer of cream cheese on each tortilla, then sprinkle a generous portion of the shredded cheese mixture, leaving a small border around the edge. Roll up the tortillas tightly and place them seam side down in a baking dish. Pour salsa generously over the tortillas.
  • Bake uncovered for approximately 25 minutes until hot, then garnish with fresh avocado and onions.
