Ingredients:
  • 2 cups shredded Swiss cheese (8 oz)
  • 2 cups shredded Gruyère or Swiss cheese (8 oz)
  • 2 tablespoons all-purpose flour
  • 1 clove garlic, cut in half
  • 1 cup dry white wine or nonalcoholic white wine
  • 1 tablespoon lemon juice
  • 3 tablespoons kirsch, dry sherry, brandy or nonalcoholic white wine
  • 1 loaf (1 lb) French bread, cut into 1-inch pieces
  • Apple and pear slices, if desired
Instructions:
  • Combine cheeses and flour in a resealable plastic food-storage bag, then shake until cheese is coated with flour.
  • Infuse the fondue pot or saucepan with the delightful aroma of garlic, then remove it. Pour in the wine and warm it gently until bubbles form on the surface. Finally, add a splash of invigorating lemon juice.
  • Slowly incorporate the cheese mixture, adding roughly 1/2 cup at a time, and stirring continuously with a wire whisk on low heat until fully melted. Mix in the kirsch.
  • Keep warm over simmer setting. If made in a saucepan or skillet, transfer to a fondue pot or heatproof serving bowl and keep warm over low heat. Serving fondue over heat is essential to preserve its smooth, creamy texture.
  • Skewer bread and fruit with fondue forks, then dip and swirl in fondue using a stirring motion. If fondue thickens too much, gently mix in 1/4 to 1/2 cup of heated wine.
