Creamy butternut squash pasta sauce with three-cheese blend, a sweet and velvety twist sans tomatoes. Versatile and decadent, elevating any dish it touches.
Ingredients:
  • 2.5 cups butternut squash, peeled and cut into 1/2-inch cubes
  • 1 tablespoon butter
  • 0.33333334326744 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 0.33333334326744 apple, peeled and chopped
  • 1 cup chicken broth
  • 0.33333334326744 cup milk
  • 0.33333334326744 cup Italian cheese blend (Parmesan, Asiago, and Romano)
Instructions:
  • Place the squash in a saucepan, cover with water, and boil until very tender, about 15 to 20 minutes. Drain and measure 2 cups of cooked squash.
  • In a skillet over medium-low heat, sauté onion, garlic, and apple in olive oil and butter until soft and golden, about 15 minutes. Add butternut squash and chicken broth, bring to a boil, then simmer. Stir in milk and cheese blend, cooking until sauce thickens, about 5-10 minutes. Season with salt and pepper to taste.
