Cheesy cauliflower colcannon mash

Elevate traditional Irish dish with added sharp cheddar for a bold flavor.
Ingredients:
  • 300g cauliflower, cut into florets
  • 70g mature cheddar, coarsely grated
  • 150g green cabbage, shredded
  • 40g butter, chopped
Instructions:
  • Steam cauliflower until tender, then mash with cheddar cheese in the same pan.
  • In a frying pan over medium heat, melt butter until sizzling. Add cabbage and sauté for 5 minutes until tender, stirring occasionally. Season with salt. Mix cabbage into the cauliflower mash and add cracked black pepper to taste.
