Cheesy chicken and vegetable pasta

Create a kid-friendly and delicious pasta dish with a clever twist.
Ingredients:
  • 375g dried bow tie pasta
  • 20.00 gm reduced-fat margarine spread
  • 1 medium leek, trimmed, halved, washed, sliced
  • 2 garlic cloves, crushed
  • 100g small cup mushrooms, sliced
  • 40.00 ml plain flour
  • 515.00 gm reduced-fat milk
  • 250g broccoli, cut into small florets
  • 500.00 ml chopped cooked chicken (see note)
  • 125.00 ml grated reduced-fat tasty cheese
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente. Drain well.
  • In a saucepan over medium heat, melt the margarine until bubbly. Stir in the leek, garlic, and mushrooms and sauté for 5 minutes until tender.
  • Add the flour and cook while stirring for about 1 minute until bubbly. Remove from heat, then slowly pour in the milk while stirring until smooth. Place the pan over medium-low heat and continue stirring until it comes to a boil.
  • Combine broccoli and chicken in the pot, cover, and cook for 4 minutes until broccoli is tender. Mix in cheese and pasta, stirring well. Serve and enjoy!
