Cheesy wreath with brie, blue cheese, nuts, crackers, sun dried tomatoes, and olives - a festive showstopper.
Ingredients:
  • 150g double cream brie
  • 150g creamy blue cheese
  • 62.50 ml pistachio kernels, toasted, finely chopped
  • 40.00 ml pecans, toasted, finely chopped
  • 1 bunch fresh rosemary, cut into small sprigs
  • 1/2 x 185g packet garlic crackers
  • 1/2 x 100g packet cranberry and sunflower seed crackers
  • 220.00g packet cheddar twists
  • 100g mixed green marinated olives
  • 135g tub semi-dried tomatoes in Mediterranean herbs
  • Honey, to serve
Instructions:
  • Slice the cheese into 8 wedges using a damp knife. Mix together pistachios and pecans in a bowl, then season with salt and pepper. Press one side of each cheese wedge into the nut mixture and place them on a plate.
  • Create a decorative wreath on a serving platter by arranging rosemary in a ring shape. Top it with crackers and twists to form the base. Add cheese wedges on top of the crackers, then surround them with olives and tomatoes for added flavor and presentation.
  • Drizzle the wreath with honey and serve right away.
