Creamy vegan mashed potatoes with garlic, using dairy-free cheese and olive oil for a rich and flavorful dish.
Ingredients:
  • 3 medium potatoes, scrubbed
  • 0.25 cup olive oil
  • 1 slice vegan Cheddar cheese (such as Daiya®)
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 0.25 teaspoon chopped fresh chives, or to taste
Instructions:
  • Pierce potatoes with vent holes and microwave on high for 13 minutes.
  • Simmer olive oil, vegan cheese, garlic, salt, and pepper in a small pot over medium-low heat until the cheese is melted and the garlic is cooked through.
  • Cool the potatoes slightly. Then, halve them and scoop the flesh into the pot, leaving the skins aside.
  • Combine mashed potatoes with creamy cheese sauce until evenly mixed.
