Delicious low-fat pasta pots, ideal for a light meal or snack.
Ingredients:
  • 250g penne rigate
  • 20g butter
  • 20.00 ml plain flour
  • 193.13 gm milk
  • 375.00 ml reduced-fat tasty cheese, grated
  • 62.50 ml frozen peas
  • 1 small red capsicum, finely diced
Instructions:
  • Heat your oven to a perfect 180°C and generously grease 6 ramekins with a 3/4-cup capacity each.
  • Boil pasta in a large saucepan of salted water until al dente. Drain and place back in the saucepan.
  • In a small saucepan over high heat, melt butter. Stir in flour and cook for 45 seconds. Remove from heat and gradually pour in milk, stirring constantly. Bring back to heat and cook until the sauce boils. Lower the heat and simmer for 3 minutes. Mix in 1 cup of cheese until fully melted and combined.
  • Mix the sauce, peas, and capsicum with the pasta until well combined. Transfer the mixture into individual ramekins. Sprinkle the top with the remaining cheese. Bake in the oven for 15 to 20 minutes or until the cheese is golden brown.
