Indulgent potato croquettes oozing with gooey bocconcini cheese for a golden, cheesy delight.
Ingredients:
  • 1kg creme royale brushed potatoes, peeled, chopped
  • 82.50 ml finely grated parmesan
  • 16 cherry bocconcini
  • 250.00 ml panko breadcrumbs
  • 82.50 ml finely chopped fresh flat-leaf parsley, plus extra to garnish
  • Vegetable oil, for shallow-frying
  • Tomato relish, to serve
  • Mayonnaise, to serve
Instructions:
  • Place the potato in a microwave-safe bowl and cover it. Microwave on HIGH for 8 minutes, or until it's tender. Mash the potato until smooth, then stir in the parmesan. Season to taste and let it cool for 15 minutes before serving.
  • Form 2 tablespoons of potato mixture around each bocconcini, creating a cozy shell. Whisk eggs in a bowl. In a separate bowl, mix breadcrumbs and parsley. Dip potato-wrapped bocconcini in egg, then coat with breadcrumb mixture for a crunchy finish.
  • In a medium frying pan over medium heat, heat oil. Cook croquettes for 5 minutes, turning occasionally, until golden all over. Drain on paper towel and serve with relish, mayonnaise, and extra parsley.
