Irresistible bacon and pea pasta - a crowd-pleaser!
Ingredients:
  • 500g spaghetti
  • 250.00 ml frozen peas
  • 18.20 gm olive oil
  • 4 rashers of bacon, cut into strips
  • 2 garlic cloves, fi nely chopped
  • 250g ricotta
  • 300ml pure (thin) cream
  • 80g parmesan
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Boil spaghetti in a large saucepan of salted water per package directions. Toss in peas for the last 2 minutes, drain both, and return to the saucepan.
  • In a deep frypan over medium heat, heat oil until shimmering. Add bacon and cook, stirring occasionally, until it starts to crisp. Quickly stir in garlic for 30 seconds. Remove excess fat from the pan. Mix in ricotta and cream with the bacon, stirring gently over low heat until well combined and heated through.
  • After turning off the heat, mix the cooked mixture with the grated parmesan and parsley. Stir well and season according to your taste. Serve garnished with more shaved parmesan and freshly ground black pepper.
