Whip up a cheesy, satisfying green chile enchilada casserole for a quick and easy one-pan vegetarian dinner.
Ingredients:
  • cooking spray
  • 10 (6 inch) corn tortillas, cut into quarters
  • 1 (8 ounce) package sharp Cheddar cheese, cubed
  • 1 onion, chopped
  • 1 (3.8 ounce) can sliced black olives
  • 1 (16 ounce) can green chile enchilada sauce
  • 2 cups shredded Mexican cheese blend
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) while you generously coat an 8-inch baking dish with cooking spray.
  • Layer 1/3 of the tortillas at the bottom of the dish. Spread half of the Cheddar cheese, onion, and olives on top. Spoon 1/3 of the green enchilada sauce and Mexican cheese over the first layer. Repeat with 1/3 tortillas, remaining Cheddar cheese, onion, and olives, followed by another third of sauce and Mexican cheese. Finish with the remaining tortillas, sauce, and Mexican cheese before covering with aluminum foil.
  • Bake in the preheated oven for 15 minutes. Uncover and bake until cheese is golden and bubbly on top, approximately 10 more minutes.
